  21. 1 tsp Tumeric
  22. 1 pinch Curry leaves
  23. 1 tsp Cardamom seeds
  24. 1 tsp Mustard seeds
  25. 1 tsp Garam masala
  26. 1/4 Cinnamon stick

Instructions to make to make Chicken Masala

  1. For two minutes, heat all spices in a large pan, moving them around so they don't burn. Remove & grind them in a pestle & mortar.
  2. Season the chicken. Add the butter to the pan you used for the spices, then add the chicken & brown it all over. Remove from the pan.
  3. Put the onions, garlic, ginger & chillies in the pan & cook for 2-3 minutes. Add the aubergine, tinned tomatoes, tomato puree, chicken stock, chicken & spices & simmer gently for 45 minutes.
  4. Check the seasoning & the consistency of the sauce. It should be reasonably thick. If it's not, reduce further (by simmering or boiling the liquid so the water evaporates). If it's too thick, add more stock or water.
  5. Add the coconut milk & lemon juice. Simmer for a further five minutes, then sprinkle with chopped corriander & flaked almonds.
  6. Serve with basmati rice
  7. 1 hr 15 mins cooking.
